Jalapeno Cheese Sausage with Beans and Rice Royal

This is one of those recipes you throw in the crock pot for 10 hours on low heat and never touch it again.  (You're welcome)   Here is what you are going to need:

  • 1 pound of link jalapeno/cheese sausage, cut into small bites
  • 1 pound of red beans dry
  • 8 cups of water
  • 4 celery stalks chopped
  • 2 teaspoons of garlic minced
  • 1/2 green bell pepper chopped
  • 1/2 red bell pepper chopped
  • 1 small onion, chopped
  • 2 Tablespoons of Creole Seasoning or 3 if you don't use jalapeno sausage
  • 3 cups of uncooked Rice Royal, cooked to package specifications right before eating
    This entire recipe with serve 8. The 3 cups of uncooked rice will serve 4.  It is way better the next day, so I will cook 3 additional cups of rice for left overs.
 
Place ALL ingredients, but rice, in the crockpot on a low heat if you cook it for 10 hours, and medium for 8 hours.  If you cannot find the Rice Royal, we prefer Wild Rice with this recipe but cook whatever rice you prefer.  (rice royal is a blend of white, brown, red and wild rice)
 
After cooking is complete, serve over rice and enjoy!

Maple Breakfast Caserole (make ahead)

Maple Breakfast Casserole

As you have probably learned by now, I do not cook difficult meals.  This falls right in with the quick and easy!  Again, mine is gluten free as I used my gluten free bread which I made from the Gluten Free Pantry box mix.  
But you can use whatever bread you desire. 

Here is what you will need... 1 pound maple flavored sausage cooked and drained, 2 cups milk or soy milk, 8 eggs, 2 teaspoons of vanilla, 2 teaspoons of cinnamon, 1/4 cup of pure maple syrup, 
2 cups of cheddar to top at the end of baking, 
and bread of choice cubed to place in the bottom of your baking dish

Preheat your oven to 350 degrees and place cubed bread in sprayed baking dish
SO PRETTY  

In a bowl whisk together your 8 eggs, syrup, cinnamon and vanilla with your 2 cups milk


Place your cooked and drained sausage on top of your cubed bread, then pour your milk and egg mixture over the top.  Refrigerate over night, or for at least 3 hours before cooking.  Bake uncovered for 30 minutes then top with cheddar to bake an additional 10-15 minutes or until the center is solid and not watery.  Let it cool for about 5 minutes and serve with a nice fruit salad. 


This dish is supposed to taste like a McGriddle at McDonalds,,,
I think it's better 
and certainly healthier. 

Sarcasm note:  I'd much rather have breakfast at McDonalds.... uh NOT!

Gluten Free Potatoes and Sausage

As children our menu consisted of two choices: take it or leave it!  I have made things in the past, ok the present as well, that my family is not crazy about.  (esp since I have begun learning to cook Gluten Free) But you are going to at least give it a shot before you complain at my table.  This recipe is just 'naturally' gluten free, and by that I mean you don't have to buy special flours, gums, oats ect.  So meat & potatoes is definitely a TAKE IT meal for my boys! 


 Here is what you need:  2 Tablespoons olive oil, little gold potatoes, sausage of your choice, red pepper, green onion, salt, pepper, 1 cup water, & rosemary or thyme. (If you don't have one or the other, you meal is going to be fine without it)


 Just to speed things along, I wash the amount of potatoes my family will eat and place them in the microwave for 1 1/2 minutes, turn and cook another 1 1/2 minutes on the other side while I am preparing the other ingredients.
  
While your potatoes are in the microwave, cut your sausage, red bell pepper and onions.   I'd like to tell you an amount, but each simple ingredient is up to you and how many you are feeding and how much they like of one thing.    
When your potatoes are finished, place your 2 Tablespoons of olive oil in a pan on a medium heat.  Dice your potatoes and place them along with the sausage in your pan.  Add I cup of water for the potatoes and sausage to steam.

Add salt and pepper to your liking, veggies on top, toss and cover.  Turn heat down to medium low and let steam until potatoes are tender.  Remove from burner, top with rosemary and serve.  I made a pan of gluten free cornbread to go along with this nice winter meal. 




So...isn't it pretty? My son devoured it, and when I found his plate in the sink it was covered in green onions and red bell pepper.  At least he didn't complain and chose his own method of "take it AND leave it".
