REAL Banana Pudding

Is there an easy way to make banana pudding?  Yes, vanilla jello pudding and whip cream layered with bananas and nilla wafers.  But is it as good as REAL banana pudding?  Well, is a fake diamond as good as a clear princess cut?  Ummmm, NO. So if you want to give a little extra effort, I promise it will be worth your time.  And as far as Gluten Free goes, just don't use nilla wafers or use your favorite Gluten Free Sugar cookie in substitution and you are GF.

Here's what you need:
2 c sugar. 10 regular kitchen tbsp. all purpose flour OR ALL PURPOSE GF FLOUR, 6 lg eggs, 1 pinch salt, 5 cups 2% milk, 6 lg bananas, 1 tsp pure vanilla extract, 1 stickk butter, 1 lg pkg.vanilla wafers, and for the HEAVY CREAM FILLING, 1pt heavy whipping cream, 3 Tbsp sugar

 Beat your eggs and set aside.  Mix sugar, flour and salt and add to your eggs.  Gradually add milk and transfer to a heavy double boiler pan.  Stir constantly on a medium heat until THICK.  Not thickening, thick like pudding.

Once it has thickened, removed from heat (or just turn off and leave on double boiler) and add  butter and vanilla.
 

Cut up 5-6 bananas depending on their size and set aside in a bowl.
Line the dish with the nilla wafers, and begin on your whipped cream.

Beat a pint of heavy whipping cream until it begins to slightly thicken, then add 3 heaping tablespoons of sugar until thickened or at least peaks.
Now you should have your pudding, bananas and cream.  Just start to layer starting with cookies, then bananas then cream and repeat ending with cream.  Chill and serve.  I have a banana connoisseur in my home who enjoys his pudding a little warm so I make a special bowl for him and set it aside.  :)
