Easy Cheesy Quick Rolls

This gluten free bread is so quick you can have it from start to your tummy in 20 minutes.  But don't be fooled you wheat eaters....it is NOT your grandma's biscuits.  These are crisp on the outside and airy and cheesy on the inside.  They are made with tapioca flour, also known as tapioca starch,  it is a starchy white flour that has a slight sweet flavor to it. So these are not going to b e a salty tasting bread unless you add the salt. I'm not trying to talk you out of these, my family loves them and I love how easy they are.

Here is what you will need:

1 egg preferably at room temperature, 1/3 cup olive, 2/3 cup milk,,  1 1/2 cups tapioca flour NOT PACKED, 1/2 cup packed grated cheese of your choice, (in South America they use a  queso fresco) and because tapioca is a sweeter flour you will need 1 teaspoon of salt (or more to taste).  They will not be as tasty without the salt. Get your oven preheated to 400 degrees and get started.

The picture doesn't show the salt!  (loser)
You are going to make these in a mini muffin pan because the cook faster and they make EXACTLY 24 little rolls. Don't forget to spray your pan.

Put all your ingredients in your blender starting with the wet ingredients because they pull the tapioca flour down.  But tapioca is really fine, so you may need to scrape down the side during blending.

This batter is NOT thick, so pour it into your mini pan and it should make exactly 24.  Place into your 400 degree preheated oven and bake for about 10-12 minutes.

These things are so quick and cute its ridiculous! Take them out when they look a LITTLE brown, they are easy to cook too long and then they will be too crispy.
These will drop right out of the pan and you can serve immediately, or reheat in the oven, NOT MICROWAVE, before serving. They are great instead of crackers with a stew our soup.   Enjoy and you are welcome...

My hidden gluten problems...

So instead of a food post today, I thought I might give you some tips.  My husband and I just took our son out to eat for his birthday to a really nice steak house in our city.  (I do NOT miss children's birthday parties, party bags or bringing home more presents than a sugar- high child needs)  Anyway, I had NO BREAD, CRACKERS, or CROUTONS.  I instead had a wonderful steak, a baked sweet potato, and a salad with balsamic vinegar dressing.  NO GLUTEN.  Within 20 minutes I was sick.  I did not finish eating, and took the remainder of my meal home in a box for the 17 year old to devour as a late-night $30 snack.

I could not imagine what in the world I could have eaten to set off the roaring mass exodus of food in my stomach? It's like being in the first trimester of pregnancy all over again.  Who needs that?  NO ONE

There are a few things it could have been, and this is why you need to be great friends with your server. Always let them know you are gluten free!  Some will look at you with the the most puzzling look, like you just asked them to bring you a live monkey with a hat. Just say, "I can't eat wheat". You and I know there is more to it than that; but come on....they're young and confused.

So, the bacon bits in my salad could have had gluten, they could have forgotten and picked off the croutons, or the steak could have been cooked on a grill that had previously cooked a gluten coated meat or vegetable.  (That is known as cross contamination)  Either way, don't let it get you down and let situations like this increase your love for healthy cooking at home!   Like this beautiful loaf of gluten free bread I made earlier in the day...Amazing right?

Well I go to eat a piece for my pity party of one and wouldn't you know it.  I open the butter and THERE, in the NEW tub of butter, finger marks.  Teenagers!!!! UGH We have knives.  Sharp knives, serrated knives, butcher knives, cutting knives, peeling knives, we even have a carving knife, a salmon knife, and a cleaner knife.

But I guess you have to go inside a drawer, use it and put it in the sink in order to butter bread.  God gave you fingers for that right?  WRONG  Remember, I'm a mom, a clean freak, I just had a gluten induced 'moment' and there are KNIVES in my house.  Use one! (or I might)

You will never believe this one! Left over roast recipe...

As I have stated before...I LOVE it when I purchase ingredients and someone eats it before I can cook.  I was going to make calzones and a group of boys I shall not mention, but their leader's name rhymes with Tacob, ate the mozzarella and pepperonis. So with two loaves of bread already risen, and rolled, what am I to do? MAKE SOMETHING UP (or throw a fit)

No one was home to see or hear my fit so I chose to make          something up, no need to waste a good fit!

I had made roast the night before so I gave this a shot and it turned out edible.  I'm not saying it's the best recipe I've ever made but it really turned out better than expected.  So here we go, I had laid out two loaves of frozen bread earlier in the day and when they rose I rolled them out as above.

Then I took, left over roast cut in small pieces, chopped onion to taste, mushrooms chopped, bell pepper, a small potato thin, thin, thinly sliced, and hot sauce of choice to taste and laid it down the center of my dough.  I then seasoned with salt, pepper, and garlic powder.   Top with cheese of choice.  Cut 1 1/2 inch strips at an angle along each side of your mixture and begin laying them across your mixture to cover.  It will leave some gaps and that is just fine! I baked it at 400 degrees until it was brown...

Here is the end result.  I served it with baked beans and a salad, along with some brown gravy for dipping if my family so chose. (and we are from the south so they chose!)  To make it I used the juice from the roast, with a little salt and pepper, water and flour in a skillet heated to desired thickness.  Apparently, this was a big hit!  Or everyone ate it because they knew I was mad....

**Sarcasm note- this was a catastrophic success!

Calzones

I use Rhoades frozen rolls and lay them out on sprayed wax paper all day until they rise
Then each roll get pressed and rolled out on a floured surface, and filled with your favorite toppings plus 2 Tablespoons of your favorite sauce-we like Prego
Leave enough room to fold the calzone over, and roll the edges together. When finished brush
on olive oil and place them on a sprayed cookie sheet and bake at 400 for 15-20 minutes.

--------------------------------------------------------------------------
The kids and I literally have all our ingredients out on the island and each kid makes the kind they like:  mozzarella, Colby jack, bell peppers, onions, pepperoni, Canadian bacon, jalapenos, mushrooms...no end!

You can freeze these things EASILY!  Just wrap individually in wax paper and then in foil. Write on the outside what type it is.  i.e. cheese and pepperoni ect.   They do NOT have to be thawed out to be cooked.
Sarcasm Note: Now, the kids can just go get one and cook it themselves without bothering you AT ALL.
(whatever)

Bacon, Cheesy Bread

This sweet, sweet lady at missinthekitchen.com shows you how to make the bread homemade with yeast and all, because she is amazing!  Sarcasm Note:  I'd really like to do this, but I am so busy churning my own butter I'm going to have to cheat and use biscuits.

Ingredients:  3 cans of buttermilk biscuits,   1/4 cup melted butter,   16 oz shredded colby-jack cheese, and 1/2 pound cooked and crumbled bacon

Instructions:  Cut biscuits into quarters and cover the bottom of a bread dish, brush biscuits with butter, sprinkle with bacon and cheese.  Repeat until biscuits are gone.  Bake at 350 Degrees or until biscuits are golden brown.

I'll put my own picture up next time.  When I went to get the camera, the offspring devoured it.  ARRGGHHHHH!
