Gluten Free Pizza

Ok, so this is not really a recipe per say. But just a recommendation on a gluten free crust you can make at home.  I have tried A LOT of gluten free pizza crusts and they are not too bad; but I made Pamela's  crust today and I must say it was a nice blend of "sturdy" yet not too heavy.  I enjoy going out to eat pizza as much as the next person, but finding a gluten free place is crazy and their crusts are always like a really thin cracker - it is annoying really - and very expensive.  After I made this crust, and my family ate, my son said, "mom you are going to feel bad tonight aren't you?"  
NOPE BUDDY - I'm not!
 
Pamela's Pizza Crust Mix will make about a medium pizza with a decently thick crust. I laid it out on a large pizza pan, but did not roll it out thinly so we could have a thicker crust:
 
 When I rolled it out, I used brown rice flour to keep it from sticking. 
 I sprayed the pizza pan with olive oil and crimped the edges like a pie to hold a little
extra sauce, which my family enjoys.  (We prefer Prego for a tomato sauce)
After I spread on the Prego, we started raiding the fridge for the goodies!
Pepperoni, cheeses, onions, green peppers, jalapenos, mushrooms and all. 
Bake it at the recommended temp on the bag and enjoy a beautiful
Gluten Free Pizza at home...
 
It always thrills me to go to West Crist Pizza and pay $20 for a gluten free crust
that has the consistency of a saltine cracker.

Grilled BBQ Chicken Pizza

I know I already have a BBQ Chicken Pizza on this blog, but I wanted to try it again with the grill.
I just love spraying the grill and unrolling the pizza dough on to it, because it makes for a beautiful piece of bread.  But take it off of your grill prior to topping it to prevent burning...So you need:  2 cans of pizza dough, 1 bottle of your fave bbq sauce, 4 cups cheese, 2 chicken breast boiled, and cubed, and whatever toppings you prefer.
I used cheddar on this recipe and the kids liked it better.  
Myself?  I prefer a nice white, soft cheese.
I went out and picked the garden, & except for the onion, added a few veggies and fresh jalapenos to the 2 boiled and chopped chicken breast.  
Then along with some olive oil, and a few tablespoons of BBQ sauce, 
I heated it  in a sauce pan prior to topping the pizza bread. 

Take your bread and spread with BBQ sauce, top with cheese, add warmed veggies and chicken from the pan and replace onto the grill on INDIRECT flame and close the lid until cheese is melted.   Served immediately!

Calzones

I use Rhoades frozen rolls and lay them out on sprayed wax paper all day until they rise
Then each roll get pressed and rolled out on a floured surface, and filled with your favorite toppings plus 2 Tablespoons of your favorite sauce-we like Prego
Leave enough room to fold the calzone over, and roll the edges together. When finished brush
 on olive oil and place them on a sprayed cookie sheet and bake at 400 for 15-20 minutes.

The kids and I literally have all our ingredients out on the island and each kid makes the kind they like:  mozzarella, Colby jack, bell peppers, onions, pepperoni, Canadian bacon, jalapenos, mushrooms...no end!

  You can freeze these things EASILY!  Just wrap individually in wax paper and then in foil. Write on the outside what type it is.  i.e. cheese and pepperoni ect.   They do NOT have to be thawed out to be cooked.
Sarcasm Note: Now, the kids can just go get one and cook it themselves without bothering you AT ALL.

BBQ Chicken Pizza


Ingredients:
1 premade pizza shell or pizza dough in the refrigerated section
1 jar of your favorite BBQ sauce
2 chicken breast, boiled and cubed
1 cup each of mozzarella and cheddar
Toppings of choice:  onions, jalapenos, bell peppers, mushrooms ect 

Preheat oven to cooking instructions: place hefty amount of sauce over dough, top with cheeses and other toppings and bake until cheese is bubbly.  Sarcasm Note:  Please email and ask if there are other toppings you can add, it won't waste my time
