Gluten Free Nutella No Bake Cookies

These are pretty great cookies.  Not only do they have Nutella, which is the spread of happiness, but they also have peanut butter!  (plus sugar and butter-so you can eat all you want)  I am not certain if it is the peanut butter or not, but these cookies are almost ready to eat as soon as you drop them on the wax paper.  Let's get going on this!

Here is what you will need:

  • 2 cups sugar
  • 1/4 cup cocoa
  • 1/2 cup milk
  • 1/2 cup butter
  • 1 tsp vanilla
  • pinch of salt
  • 1/4 cup peanut butter
  • 1/4 cup Nutella
  • 3 cup quick oats
  • Sea salt for topping if you like the sweet/salty taste ( I do this on about 1/2 of the cookies)

    Over a medium heat melt butter, add milk, then sugar and cocoa. Bring to a boil and boil for one minute. Remove from heat. Stir in vanilla and salt.  Pour hot mixture over peanut butter, Nutella and oats. Stir until combined. Drop by teaspoon on wax paper and cool. When the cookies are hardened eat and repeat!

    to make this:
    Dropped by the spoonful on to wax paper to cool. 
    If you want you can
    add sea salt for a twist on the flavor.

    Baked Coconut Chicken

    Being Gluten free is a difficult when you would just like to have some crispy chicken!  No quick panko breadcrumbs or flour unless you use gluten free versions and at the time of this recipe, I did not.  So, I used what I did have and it turned out wonderfully and quite tasty if I do say so myself.

    All you need is:  3-4 chicken breasts cut in half end to end to make them thinner, about 1/2 cup of coconut, and 3 Tablespoons of coconut oil.  Preheat your oven to 300 degrees as you chicken is really thin.  This is so quick and easy it's crazy!

    Put your coconut in a food processor to make it really ground up like bread crumbs


    Cut your chicken from one end to the other make two thin pieces out of it.

    while your oven is preheating, put your coconut oil in the pan you will be using, and after it is melted coat the top of your chicken with the melted oil and then your coconut.  Cook at 300 degrees until the coconut is toasted.  With the chicken being so thin, it is well cooked by the time your coconut is browned. 

    I just served with a brown rice, nice green salad and my quick gluten free cheese rolls.

    Easy Cheesy Quick Rolls

    This gluten free bread is so quick you can have it from start to your tummy in 20 minutes.  But don't be fooled you wheat eaters....it is NOT your grandma's biscuits.  These are crisp on the outside and airy and cheesy on the inside.  They are made with tapioca flour, also known as tapioca starch,  it is a starchy white flour that has a slight sweet flavor to it. So these are not going to b e a salty tasting bread unless you add the salt. I'm not trying to talk you out of these, my family loves them and I love how easy they are.   

    Here is what you will need: 

    1 egg preferably at room temperature, 1/3 cup olive, 2/3 cup milk,,  1 1/2 cups tapioca flour NOT PACKED, 1/2 cup packed grated cheese of your choice, (in South America they use a  queso fresco) and because tapioca is a sweeter flour you will need 1 teaspoon of salt (or more to taste).  They will not be as tasty without the salt. Get your oven preheated to 400 degrees and get started.

    You are going to make these in a mini muffin pan because the cook faster and they make EXACTLY 24 little rolls. Don't forget to spray your pan.

    Put all your ingredients in your blender starting with the wet ingredients because they pull the tapioca flour down.  But tapioca is really fine, so you may need to scrape down the side during blending.

    This batter is NOT thick, so pour it into your mini pan and it should make exactly 24.  Place into your 400 degree preheated oven and bake for about 10-12 minutes.

    These things are so quick and cute its ridiculous! Take them out when they look a LITTLE brown, they are easy to cook too long and then they will be too crispy.
    These will drop right out of the pan and you can serve immediately, or reheat in the oven, NOT MICROWAVE, before serving. They are great instead of crackers with a stew our soup.   Enjoy and you are welcome...

    Easiest Broccoli Ever!

    All you need it fresh broccoli, whatever amount your family will eat, there is no magic amount.  Cut the florets off of the stem, and place on a nonstick cookie sheet
     
     I added a few red peppers and onions I had in the fridge, then squeezed fresh lemon juice to lightly coat, then salt and pepper to taste.  Pop in the oven at 400 degrees for quick heating.  I can't even tell you how long, but you don't want them brown.  I do not even wash the broccoli to keep it from being soggy.  If germs can survive 400 degrees in an oven, more power to them!

    I just happened to serve this broccoli with yukon gold baked potato salad and a barbequed pork chop.  
     ** Sarcasm NoteI worked like a dog on this meal!  Made the salad yesterday, popped the chop in the oven and when it was done threw in the broccoli for a few minutes.  I'm a hero people, a hero!

    Green Nachos (gluten free)



    GREEN NACHOS

    Here is what you will need:  1 pound hamburger, Tomatillo sauce, 1 can pinto beans, sour cream, salt and pepper to taste, 1 jalapeno seeded (unless you like it HOT), chips of choice, 1-2 cups cheddar, and an avocado.  Please feel free to use whatever toppings you'd like.  Tomatoes, lettuce ect...

    I like Jardine's TOMATILLO

    Brown your meat, and while it is browning, place your beans with the juice, in a pan. Add two heaping tablespoons of Tomatillo, and two heaping tablespoons of sour cream.  Salt and pepper. 




     Then add your jalapeno with or without seeds, stir to combine and simmer on a medium heat. 
    Once your hamburger meat is is cooked, drain and add to your creamy beans!
    This is what it will look like...yummy :)


    You can choose whatever chip is your favorite, my son REALLY likes fritos.  Top with your cheddar and then top with your meat mixture.  Garnish with GREEN avocados, GREEN onions, tomatoes, GREEN lettuce, or more sour cream!  It's YOUR meal, go for it!


    If I add GREEN avocados to anything, I always add a little GREEN lime juice to keep from browning and, it adds a kick!

    Frittatas

    So what is a Frittata?  It is an Italian omelet.  Some people will tell you it is the difference between folding in your ingredients with your eggs vs. laying them on top, some say the thickness, and some say it is how it's cooked or sliced.  Be real....it's an omelet.  Period.  Get over it. To prove my point, my very educated husband asked what we were having for supper and I told him, "Frittatas".  He was so excited! We ate, and he said, "that tasted and looked just like an omelet, but really good!"  (he's no dummy)


    Now we have the truth let us begin to cook!

    You will need about a dozen eggs, 2 cups of cheese, 1 medium tomato, fresh spinach and basil, green onions, golden Yukon potatoes, red pepper, salt and pepper.  By now, you must realize I want you to add the amount of each ingredient based on how many you are feeding and how much you like.  For Frittatas, you will not need much of any of these.  So if you have regular potatoes and don't want to use Yukon-DON'T! 

    I KNOW the secret to a fantastic Frittata is the CHESSE.  Period.  I love garden jack and you can usually find it among your specialty cheeses.  Also great for this recipe is feta, but  choose your family's favorite. 


    I was having a Bible study and wanted make something easy to eat so I put these in muffin tins. I cut up about 1/4 of my red pepper, 3 green onions, and THINLY sliced the yukon gold potatoes, added salt and pepper and with 2 tablespoons of butter, placed them in the microwave for about 2 minutes.

    Shred your cheese, add to your bowl of microwave softened veggies, add your tomato, spinach, basil, eggs and beat well until combined.  (mushrooms are also great in your frittata)
    I decided to add two eggs for each person, which turned out perfect with no BIG eaters
    It is such a beautiful dish!  Even though I chose muffin tins which make about 16 with 10 eggs, you can also do a skillet until cooked on the bottom and then put in the oven on broil until the top is firm. 




    I tried to use my olive oil in the spray bottle to coat my muffin tin, but it DID NOT WORK!  They stuck somewhat around the edges so just use your PAM or other spray.  




    Bake at 350 degrees until your eggs are firm.  I served with gluten free toasted bread and fruit.  You cannot go better than healthy and gluten free!  ENJOY! ***NOTE no chickens were harmed in the making of these Frittatas
